THE HEALTHIEST PANCAKES EVER!


If there's a healthy alternative to a junk food that I think everyone should know about, it's this. I love pancakes, but they don't love me. Unrequited love is always heartbreaking, but is so much worse when the object of your affections actually detests you! All that white flour bloats me up like a beach ball, and the the amount of maple syrup and butter I need to apply to them for maximum pleasure is nudging one adult's weekly fat and sugar intake. If you don't believe me, ask James. He's the poor fellow charged with the task of asking for extra, extra, EXTRA butter when we go out. Not good.

If you told me I could make pancakes that are just as good as the real thing, pancakes that don't even require toppings, I would seriously question if you'd ever actually had a proper fluffy three-stack sitting in front of you, all naked, golden brown and covered in whipped cream. I read about these "skinny" ones on a fitness forum when I was quitting sugar and needed something sweet to help me through a craving. Then I saw them artfully presented again on this amazing blog (seriously, follow her NOW) and knew what tonight's dinner was going to be. 

As well as the taste, the fun of these pancakes is the knowledge that they truly are guilt-free. Promise me you'll at least try them? This is what you're going to need:

1 large, ripe banana
2 eggs
1 tsp cinnamon
Coconut oil (for frying)

Mash the banana (no need to puree - lumps are good!) and whisk in the eggs and cinnamon. Once the oil has heated, cook them as you would regular pancakes - they won't bubble but you'll be able to tell when they are ready to flip without the "wet" side splashing all over the pan.

I enjoy mine as they are but you can top them with anything you like. I really like a nut butter - last time we spread almond butter on them and went truly nutty over them!
